Protein Muffins with Oat Bran

I've been avoiding muffins for a long time now, because they have too much sugar, fat and white flour. So I finally decided to create my own muffin-recipe, which is much healthier, because I'm using oat bran, nuts and a little bit of whey protein powder. Of course they don't taste like the fat ones from the bakery, but I think got them 90% there and love them. But the real kicker is that they are extremely high in protein, and I now have an amazing after-workout muffin-supplement. Even if you decide not to use the protein powder, this recipe is very high in protein and fiber and low in fat. This recipe is for 8 medium-large muffins. 4 spoons = 30g
10 spoons = 70g
6 spoons = 100g
small = 90g

Step 1

First pre-heat your oven to 180 degrees. Then lightly grease your muffin pans or use silicone muffin molds, which in my opinion are much better, because nothing sticks and you don't have to use any extra fat.

Step 2

Mix the oat bran with all dry ingredients in a medium bowl.

Step 3

And in a separate bowl mash the banana and mix with the yogurt and the egg.

Step 4

Now mix all the ingredients, but don't overmix and don't use a blender. I used 6 packets of splenda, but you can also use honey, brown sugar, maple syrup or any other sweetener.

Step 5

Spoon the mixture into the muffin tin and sprinkle each muffin with some grated coconut, almonds, chocolate chips or whatever you want.

Step 6

Bake 20 to 25 minutes or until you can insert and remove a toothpick in the center of a muffin without anything sticking. Bake a few more minutes if necessary.

Step 7

If they are ready, let them rest about 5 minutes and then transfer to a wirer rack to cool.
